I am currently working on growing sugar baby watermelon indoors – because I NEED my sweet little treat and of course they are not available locally – especially during these looooong Canadian winters. I must confess I do buy the occasional super market melon. When I don’t just slice and devour – this recipe is THE BOMB!!
1/2 cup fresh mint
1 1/2 lbs watermelon cubed
1/2 cup balsamic dressing
1/2 cup feta
salt and pepper if desired
Toss and enjoy! So simple, so delicious!
* Sometimes I skip the dressing
* Adding Blueberries is a wonderful twist on this combo
* Adding in some diced red onion (about 1/2 a small one) is another interesting twist.
